Have I mentioned how much I love the Wickham Farms CSA? Joining was definitely one of this year’s smarter decisions. Our family has really enjoyed the weekly pick ups of fresh produce.
I promise I won’t keep blogging about my pick ups....but last night, I made arugula pizza with the fresh baby arugula we picked up on Monday. Arugula has a peppery flavor, and can be strong, so I always find I need to contrast the flavor of the arugula with something sweet.
I first had this dish at Figs Restaurant in Boston years ago, and though I can’t remember exactly how it was done, I remembered enough and made up the rest. After all, what is a recipe but a blueprint? What you make of the final masterpiece is entirely up to you.
So I just used a naan that I bought from Wegmans, but you can use anything you like as the crust. I also purchased the Wegmans balsamic glaze from the condiments aisle and squirted this on the naan (not a ton). Next, I carmelized the spring onions (also from the CSA) and spread them on top of the naan.
I added chunks of fresh parmesan cheese (worth the splurge!) and tomatoes (I used julienne cut sun-dried tomatoes though you can also use fresh- whatever you like). Lastly, I chopped up arugula and put it over everything with one last drizzle of balsamic vinegar glaze.
It was fresh and delicious and a great way to eat veggies. Kids loved it and it was all gone in minutes!
